Cranberry Birthday Raw Cake │新鮮小紅莓生日蛋糕

After closing the tea house,

I received a few (just around 14) WhatApps asking :

"what is your planning ?"

"What are you doing?"

Thanks for all the cares and concerns.

The answer is complicatedly simple ----

Live a Gooooooooood Life.

1st Dec. is my birthday.

To celebrate I decided to do a new and interesting experiment.

("Interesting" and "Experiment" are two key words in my life.)

Apart from starting "The Little Garden Living School",

I make a pink raw cake for myself ! ^^

Recently, I frequently do juice fasting,

handle carrot and cranberry pulp become a creative task.

I feel it is unreasonably wasteful if I throw them in compost bin ----

as the carrots are organic and the cranberries are fresh !!!

It is the cranberry harvesting season in North America,

Hong Kong has no fresh supply.

(However, this is local organic carrot harvesting season.)

Each year in this moment we can buy the fresh one in special channels.

This year I discover it in local supermarket !

However, most cranberries are heavily spray with pesticide and very few of them are organically grown.

There are a few ways commonly use to minimize the effect of pesticide on produce,

the salt, the organic apple cider vinegar, the baking soda and running water.

Conventional healthcare specialists say running water is good enough,

but I prefer ACV anyway.

A rebellion spirit.

Cranberry is said to be one of the healthiest fruits in the world,

it's antioxidant-rich. Women who take care themselves know cranberry can treat UTIs, diabetes and etc.. However, too much of it can increase the risk of kidney stone.

I like cranberry because it's with sour taste, not too sweet.

Sweet woman does not need sugar. ^^

White frosting:

Cashew Nut

Cranberry frosting:

Cranberry pulp


Dried mango

Lemon juice

Cashew Nut

Coconut Water

Coconut Milk

Coconut Oil

For the measurement, "common sense" is the answer.
